Italian Stuffed Chicken Breast

These Italian themed stuffed chicken breasts are a guaranteed family dinner pleaser. The deliciously creamy mozzarella and basil centre is elevated by sun-dried tomato pesto. Slice and serve with pasta and salad!

The classic combination of tomato, mozzarella and basil can’t be beaten, and gives chicken a real boost. The prosciutto / bacon helps to keep all the moisture and all that flavour inside, so there’ll be no dry stuffed chicken breast in this dish!

You can also prepare these in advance and freeze them for a quick weeknight dinner idea. Be sure to add a few more minutes to the oven time if you cook from frozen.

  • 4 chicken breasts

  • 8 slices of prosciutto (or bacon)

  • 1 ball of fresh mozzerella

  • 12 large basil leaves

  • Sun-dried tomato pesto

  • olive oil


  • Butterfly your chicken breasts
  • Place a couple of slices of mozzerella, 3 basil leaves, and 2-3 teaspoons of sun-dried tomato pesto inside each chicken breast, roll securely
  • Wrap each chicken breast in 2 slices of prosciutto and place in a small oven dish (cooking the chicken breasts side by side means you don’t need to secure the chicken rolls with toothpicks / skewers).
  • Bake for 25 minutes.
