Pork Baby Back Ribs

These ribs are shorter than belly ribs (hence, the diminutive “baby”) they have lots of lean meat in between the bones.  We prepare them with curing salts, ensuring tenderness.  Par boil on a simmering heat for 20 minutes – then pop under the grill or onto the barbeque.  Don’t forget to add JPs tangy basting – Finger licking good!

(curing salts contain: sodium nitrite &  nitrate)
