  • •t200g Bakers Tennis Biscuits

  • •t500ml (2 cups) fresh cream

  • •t1 tin (360g) caramel treat (dulce de leche)

  • •2 x 49g Nestlé Peppermint Crisp bars, crushed

  • •Extra crushed Peppermint Crisp for garnish

Directions

  • Prepare the base:
  • Line a rectangular or square dish with a layer of Bakers Tennis Biscuits.
  • Make the filling:
  • In a bowl, beat the fresh cream until soft peaks form. Be careful not to over-whip.
  • In a separate bowl, gently mix the caramel treat to soften it. Fold the caramel into the whipped cream until well combined.
  • Assemble the tart:
  • Spread half of the caramel-cream mixture over the layer of Tennis Biscuits.
  • Sprinkle half of the crushed Peppermint Crisp bars evenly over the cream layer.
  • Add another layer of Bakers Tennis Biscuits on top.
  • Spread the remaining caramel-cream mixture over the second layer of biscuits.
  • Top with the remaining crushed Peppermint Crisp bars.
  • Chill:
  • Place the tart in the fridge for at least 4 hours (or overnight) to set.
  • Garnish and serve:
  • Before serving, sprinkle extra crushed Peppermint Crisp on top for added texture and flavour.
